Run Forest Run!!!


OK Guys, the next challenge involves running so get your running shoes out of your closet and get ready. The winner of this challenge will be the person who ran the farthest. You can run anyway you would like to add to your distance (elliptical, treadmill, track, neighborhood jog). Make sure before you get off the treadmill or elliptical you note the distance you ran or if you went for a jog, Google map your distance. Next Challenge

Ok, gang. I like the point-system idea because it really helps me to be consciously aware of what I am eating and keep track of my exercise minutes. So here’s the challenge for this week:

1. Exercise for 30 minutes a day = 1 point
2. Eat five servings of fruits/vegetables a day = 1 point
3. Eat a healthy breakfast (and I’m not just talking a piece a fruit, see website for breakfast ideas that will qualify as a point) = 1 point

Cauliflower
*** Use in place of potato salad - the taste is very similar and great

4-6 servings
Ingredients:
One head of cauliflower1/4 cup minced celery1/4 cup of minced onion1/4 cup of minced green pepper and/ or red pepper1/2 tsp yellow mustard1/2 cup of mayonnaise or salad dressing1 tsp of vinegar1 tsp Splenda (or more to taste)One or two boiled eggs1/2 tsp - 1 tsp of pickle relishdillweed (pinch or two)celery seed (pinch or two)Garnish with paprika
Directions:
Boil the cauliflower in a small amount of water or steam until nearly soft.
Drain well.
Mix other ingredients together.
Refrigerate until thoroughly chilled. (Tastes even better the next day)

Simple BBQ Ribs

"Country-style ribs are cut from the loin, one of the leanest areas of pork. These ribs are seasoned, boiled until tender, then baked with your favorite barbeque sauce. That's it! Back to simplicity, back to the country life. Sigh."

INGREDIENTS
2 1/2 pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbeque sauce

I am going to have to try this one!

DIRECTIONS
1. Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
2. Preheat oven to 325 degrees F (165 degrees C).
3. Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).

Thought I might as well do one more while I'm at it...

Apple salad with figs and almonds

2 large red apples, cored and diced
6 dried figs, chopped
2 ribs of celery, diced
1/2 c. fat-free lemon yogurt
2 T. slivered almonds
2 carrots, peeled and grated

In a small bowl, combined the apples, figs, and celery. Add yogurt and mix thorougly. Serve on separate plates topped with almonds and garnished with grated carrots.

Serves 6
95 calories per serving
17 g carbs per serving

***try substituting raisins, craisins, etc. for the figs if you want. I'm not sure what the calorie and carb exchange would be.

Pineapple Chicken Salad with Balsamic Vinaigrette

4 boneless, skinless chicken breasts, each about 5 oz.
1 T. olive oil
1 can (8 oz) unsweetened pineapple chuncks, drained except for 2 T. juice
2 c. broccoli florets
4 c. fresh baby spinach leaves
1/2 c. thinly sliced red onions

For the vinaigrette:
1/2 c. olive oil
2 T. balsamic vinegar
2 t. sugar
1/4 t. ground cinnamon

Directions:
Cut each chicken breast into cubes. In a large, nonstick frying pan, heat the olive oil over medium heat. Add the chicken and cook until golden brown, about 10 min. In a large serving bowl, combine the cooked chicken, pineapple chunks, broccoli, spinach and onions. To make the dressing, whisk together the olive oil, vinegar, reserved pineapple juice, sugar and cinnamon in a small bowl. Pour over the salad. Toss gently to coat evenly. Serve immediately.

Serves 8
187 calories per serving
8 carbs per serving

Recipe for the Weekend

Try this one. Only 193 calories and 10 carbs (2 of which are dietary fibers)

Gingered Pork and Vegetable Stir-Fry
1 Pork tenderloin (about 12 oz, thinly sliced)
2 T. Fresh Ginger (grated)
1 c. Chicken Broth (reduced sodium)
2 T. teriyaki sauce
2 t. cornstarch
2 t. canola oil
8 oz. snow peas, strings removed (fresh or frozen)
1 med. zucchini, cut lengthwise
3 onions, cut into 3 inch pieces)

1. Toss pork with ginger in a bowl. Mix broth, teriyaki sauce and cornstarch in a cup and set aside.
2. In a nonstick 12" skillet, warm 1 tsp. oil; add pork mixture and stir-fry until pork just loses its pink color, about 3 minutes. Transfer pork to bowl with ingredients.
3. Stir cornstarch mixture to blend; add to skillet and heat to boiling. Boil until sauce thickens slightly, about 1 minute, stirring constantly. Return pork and vegetable to skillet, stiry to combine with sauce and heat through. Serve.

Last Week's BIG Winner

Hey everyone - thanks for your participation in last week's challenge! Mandy, Heather, Megan, and Chad were all successful in both areas with good exercise hours and weight loss as well! Just so everyone knows there will be an update tomorrow. A couple of people needed a little more time so I am waiting for them!

2nd Chance Double Header

GEAR UP FOR THIS WEEK'S 2ND CHANCE DOUBLE HEADER CHALLENGE!
Since I am the Oldie of this group I decided to give all of you busy students a 2nd chance at the challenges that I won, which include:
EXERCISE HOURS
AND WEIGHT LOSS

So this is how it will work. You all need to get your weight first thing Tuesday morning to Chad – then again next Tuesday morning. You will receive 1 point for each tenth of 1% of your weight loss for the coming week. Also you will receive 1 point for each 15 minute session of exercise that you do during this week. The trick is that at least 20% of your total points must be from each of the two areas in order to win the challenge. So you can exercise til you drop but if you don’t lose weight you will not be eligible to win and visa versa. The good news is that during the upcoming week – you can eat anything you want ---- or should I say you can focus on having a balance of all the food groups instead of focusing on just one and watch your portions! The whole goal here is to attack this beast from several angles all at once. Have a great week!

Most of us have heard we're supposed to get at least five servings of fruits and vegetables a day- some doctors recommend as many as nine! The winner this week will be the person who eats the most servings of fruits and vegetables. Fruits and veggies are packed with vitamins A and C, iron, calcium, fiber and phytonutrients (phytonutrients are the stuff that is non-essential, but good for us nonetheless. These will lower your risk of certain cancers, heart disease, and muscular degeneration).

It's important to remember that fruits are higher in calories than vegetables are, so veggies might be a better choice a lot of the time. Most doctors recommend three or four servings of veggies for every one or two of fruit.

Online guides will tell you how much of a certain veggie/fruit constitutes a serving, but as a general rule, one serving is:
-One medium-size fruit (about the size of a tennis ball)-1/2 cup raw, cooked, or canned fruits or vegetables -1 cup raw, leafy vegetables (like lettuce and spinach)
-1/4 cup dried fruit (like raisins, apricots, and mangoes)-3/4 cup (6 ounces) 100 percent fruit or vegetable juice

Update and Winner

Alright, so another week has come and go! For last weeks challenge our winner was Julie Byron. She is embarrassed that she won another challenge but I told her she won it fair and square...and she can only win three so to pick and choose from here on out! Congrats Julie. That brings me to my next point. We are still waiting to hear who won last weeks challenge (Kerinas Challenge). I believe that it was Lauren, but if you could let us all know that would be great. In addition, please remember to send out your prizes to the appropriate people.

We all know how important drinking plenty of water is when trying to lose weight. It also seems harder for me to drink as much as I should in the winter, so this week's challenge: Drinking water! Keep track of how many ounces of water you drink each day, and send me the total (dhaney at gmail), and the winner will receive a $15 Amazon gift card! (Get it? Amazon? Ha!)


Keep in mind that you should track just water. So don't include things like diet soda, milk, etc.

Third Week Challenge


My apologies everyone, but I just got walked in the door from a quick trip to L.A... that was a long drive.

This week's challenge: Sleep.

I realize we have packed schedules, and life runs at a hectic pace... But sometimes you need to get some sleep to gear up for your crazy life. So, here are a few links I've found - since I have terrible, nay, horrid sleeping habits, (as this post's time stamp attests),

Let us take this week to reevaluate how much rest we are really giving our bodies. So this week, I'd like everyone to track their sleeping habits. Optimally, you should be getting 7-9 hours of sleep. I'm trying my hardest to get that one done - since I usually run on 6 or less.

The challenge will run from tonight, through Tuesday. So get some quality rest for yourself, and see if you can get a little more shut eye to help your body run a little better - and burn some extra calories.

After Week One!

Alright this image below has some key information that you will all want to see! First it is an updated list of who is participating and when they are hosting the challenge, so please look it over. We have two participants who are new, Julie and Shaunzi. They took the pace of people who dropped out last minute so we are now full again! Additionally it has the percentages lost this last week! I must say that the Byron/Ogaz clan is really rockin it. No but everyone did great. You may notice that there are some zero's and this is due to not having enough info to get there percentagtes yet. I don't know about you but I was pretty darn impressed with Tuesday night's 32 lb weight loss! If you missed the show- beg, barrow, steal it and then watch it. For all you Comcast subscribers its only 14.95 a mo for a DVR... I got one specifically so I don't miss out. How have the first few days gone for everyone? I want to hear all about it! Biggest Loser 2009

Details:

In the post below you will see the participants for the Biggest Loser Competition 2009. It also contains the date that each person will be hosting the challenge. The challenge is totally up to that person. We all need to know what the challenge is, how to win, and what we win! You can do total amount lost that week, hours working out, highest percent lost or anything else you can think of. The prize should be something small...like a giftcard seeing that it will probably have to be mailed to the winner!

More rules: I will be posting the stats so I will need to have your Tuesday Morning weight updates sent to me each Tuesday. You can give those to me through the blog or via email! All my updates will be posted to the blog. My updates will only contain the percentage lost for each week.

Also each person is limited to winning 3 challenges, and you cannot win the challenge that you host.
